Ingredients
2cupsrolled old-fashioned oatscertified gluten free if necessary
1.5teaspoonscinnamon
⅛teaspoonallspice
⅛teaspoonnutmeg
1teaspoonbaking powder
½sea salt
2cupsmilk of choicedairy free, such as almond milk or regular
½cupunsweetened applesauce
¼cupmaple syrup
1teaspoonvanilla extract
1cupapplediced and peeled (divided)
½cupchopped pecansor chopped walnuts
Instructions
Preheat oven to 375 degrees F. Grease an 8x8” baking dish and set aside.
In a large mixing bowl, add oats, cinnamon, allspice, nutmeg, baking powder, salt, milk, applesauce, maple syrup, vanilla extract and ¾ cup of the diced apple. Mix until ingredients are fully incorporated.
Transfer mixture into prepared baking dish and top with remaining cup of diced apple and ½ cup chopped pecans.
Bake in preheated oven for 35-40 minutes or until edges are golden brown and a toothpick inserted into the center pulls out clean. Cool for 10 minutes before slicing and serving.
Notes
The oatmeal is tender and moist when freshly baked and warm. Once it is refrigerated and sits a bit it will firm up and become more portable.
