Ingredients
14ouncepackage kielbasacut into rounds (½ inch slices)
2poundsYukon Gold potatoeswashed and diced into ½ -inch cubes (swap red skinned potatoes if you prefer)
2bell pepperssliced into ½ inch strips (used ½ a red pepper, ½ an orange pepper, ½ a yellow pepper and ½ a green bell pepper, use what ever type you like, poblano peppers are also a good choice)
2tablespoonsolive oil
½teaspoonpaprika
½teaspoonKosher salt
½teaspoonblack pepper
Instructions
Preheat oven to 400 degree F.
On a large sheet pan, place the kielbasa rounds, ½-inch cubed potatoes, and the chopped bell peppers drizzle with olive oil and toss to coat. Spread the ingredients out in an even single layer on the baking sheet with the kielbasa together in the center, the potatoes on one end, and the bell peppers on the other end of the sheet pan.
Sprinkle the potatoes and bell peppers with the paprika, salt, and pepper.
Place in hot oven and bake for 20 minutes. Turn the kielbasa and continue baking until the potatoes are cooked through and the sausage is golden brown, about 5-10 more minutes.
Remove the pan from the oven and serve the kielbasa sheet pan dinner hot.
