1poundsmall red dry beans (or red kidney beans)rinsed and sorted
112 to 16 ounce package andouille or cajun sausage, halved and sliced
1poundleftover hamcubed
1stalks celerysliced
1green bell pepperchopped
1oniondiced
2bay leaves
1teaspoongarlic powder
1teaspoonthyme leaves
1teaspoondried oregano
1teaspoonblack pepper
½teaspooncayenne pepperoptional
128 ounce can diced tomatoes
6cupswater
Instructions
Place all ingredients into the pressure cooker.
Close the pressure cooker and set the value to sealing. Set the pressure cooker to manual and high pressure cook on high for 30 minutes. When the cycle is complete, allow it to release naturally (natural pressure release is better, but quick release if you are impatient, the beans are cooked)
Remove bay leaves. Serve over cooked rice. Sprinkle with chopped green onions or sprinkle on a little Cajun seasoning if you like.
