Ingredients

lb
ground chicken

cups
sweet potato
finely shredded (about 2-3 sweet potatoes)

tablespoon
coconut oil
2
tablespoon
coconut flour
2
scallion sprigs
finely chopped
1
tablespoon
garlic powder
1
tablespoon
onion powder
1
teaspoon
chili powder
1
teaspoon
sea salt
Instructions
Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper or silicone liner and set aside.
Put all ingredients to a large bowl and use clean hands to mix well.
Scoop out heaping tablespoons of the mixture and roll them into a balls. Place on baking sheet and gently flatten into nugget shapes.
Bake nuggets in the preheated oven for 24-27 minutes, and flip half way through to lightly brown both sides.
Allow nuggets to cool for 5-10 minutes before serving.
