Ingredients
2cupsraw almonds
6cupsof water for instant pot
5cupsof water for blending
2teaspoonshoney or sweetener of choice***optional (I use a monkfruit stevia blend in mine)
Instructions
Place almonds and 6 cups of water into the instant pot. Close lid and seal pressure valve. Cook on high pressure for 3 minutes. Manually release pressure when done.
Drain and rinse almonds. Remove the skins by pinching the almonds out of them.
Place skinned almonds in blender with 5 cups of water and blend until it resembles milk. Add sweetener to taste.
Pour contents of blender over cheesecloth. Make sure you have a bowl to catch the milk. Squeeze cheese cloth until no more milk is extracted.
Notes
Nutrition info based on unsweetened version with assumption of about a ¼ cup of almond particles remaining in the liquid after draining. This is only an estimate.
No pressure cooker?
Simply soak the almonds in water for 10-12 hours, drain and add fresh water before blending.
