Easy lentil recipe, which is inexpensive and high in nutrients. The simple stewed lentils make a wonderful side dish or vegetarian main dish.

Ingredients
½tbsolive oil
1cup onionchopped
2clovesgarliccrushed/minced
2bay leaves
1 ½cupsdry lentils
3 ¼cupslow sodium chicken or vegetable stock
¼cupdry white wine
½cuptomato puree
fresh ground pepper to taste
Instructions
Put oil in dutch oven or large saucepan over med-high heat.
Add onions and garlic. Saute until onions are translucent, add bay and lentils, stir and cook one minute, then add the stock, wine and tomato puree.
Reduce heat to low-med, cover and simmer. Cook for 50-60 minutes stirring each 15 minutes, start checking doneness and remaining liquid after the half hour point. ( add a splash more stock if needed)
When done lentils should be cooked, but mostly not breaking up.
