This easy dill egg salad is a great low carb recipe. It also makes fabulous egg salad sandwiches.

Ingredients
6large hard boiled eggs
¼cupmayonnaiseI used Hellmann's Light
½teaspoondry dill weed
salt & pepper to taste
Instructions
Peel the eggs and rinse off any shell.
Chop the eggs.
Mix the ingredients with a fork, mashing down with the tines occasionally to break up the yolk and whites.
Serve over salad, on sandwich, or with crackers.
Notes
While dry dill has been used in this recipe, fresh dill can be used instead. You will need more freshly chopped dill than dried though. Try a ½ tablespoon and add a little more if you like.
