Ingredients
1medium zucchini squashspiralized
1clovegarlicminced
1tablespoonhoisin sauce*
2teaspoonpeanut powder
2teaspoonsambal olek
1teaspoonponzu sauce
50gramsa little under 2 ounces tuna, water packed
Instructions
Place a non-stick skillet over medium-high heat. Toss in the spiralized zucchini and minced garlic. Saute until wilted.
Add the hoisin, peanut powder, sambal olek and ponzu sauce. Stir and continue to cook until sauce is thickened and noodles are soft but not mushy.
Add the tuna, and stir to heat through, then scoop into a bowl to serve.
Notes
*I used Whole Foods Organic Hoisin Sauce which is 15 calories per serving and has moderate sodium. The numbers worked out for this to fit in a Keto diet, but be watchful of the Hoisin. I expect some brands may be sugar loaded.
