Ingredients
Korean BBQ Beef & Pork Cooked Perfect Fresh Meatballs
1teaspoonof sesame oil
1cupof sliced sweet peppersbaton cut
6-8ozof rice stick noodles
6-8ozbaby bok choysliced lengthwise (no thicker than an inch)
5cupsof reduced sodium chicken stock
2stalks of scallionscut into 2 inch pieces
Ponzu sauce
***optional*** 1 teaspoon chili garlic sauce
Instructions
Place oil in a skillet over medium-high heat. Saute the peppers for about a minute.
Add the dry noodles and bok choy then pour stock over top. Place scallions on top and cover. Cook for about 2-minutes, until the pot is at full boil.
Stir in the ponzu sauce (and chili garlic sauce if you want spicy) and add the meatballs. Cook uncovered for 5-7 minutes. Noodles should be cooked through but not mushy. Vegetables should be mostly cooked, but maintain some of their crisp texture.
Scoop noodles, vegetables, and Korean meatballs into bowls and top with broth to serve.
