Place chicken in a slow cooker. Pour the chicken broth and queeze juice of 1 lime on top of chicken.
Add the garlic, thyme and pepper in slow cooker.
Dot with 2 tablespoons of butter.
Heat on high 4-6 hours or low 6-8.
Serve over rice. Top with some of the chicken broth froth the pot and fresh chopped parsley or cilantro.
Cooking time may vary slightly based on size of thighs and your individual slow cooker. The variance should not be much more than 30 minutes though.Nutrition information based on standard sized chicken thighs. Does not include rice if served over that.
