Ingredients
2cupspineapplediced (fresh, not canned pineapple)
½cupsweet red pepperdiced
2tablespoonjalapeno pepperfinely diced
2tablespoonchopped fresh cilantro
2tablespoongreen onion*sliced
2 tablespoonfresh lime juice
1tablespoonapple cider vinegar**
½ teaspoonsea salt
Instructions
Chop the fresh ingredients.
Combine all ingredients in a large mixing bowl. Mix well. Taste to see if you would like to add more jalapeno or salt.
Refrigerate until ready to serve. Preferably allow at least 30 minutes before serving to allow flavors to develop, but you can serve immediately if need be.

* Finely diced red onion can be swapped for the sliced green onion if you prefer.**If concerned about gluten, make sure the apple cider vinegar is pure. I've heard a few brands may not be gluten-free.
