Ingredients
1stick unsalted butter
1cupgranulated sugar
1cupunsweetened applesauce(sweetened is OK, it won't make a big difference)
½teaspoonpure vanilla extract(optional)
2cupsall purpose flour
1teaspoonbaking soda
1teaspooncinnamon
¼teaspoonground cloves
¼teaspoonsalt
½cupraisins
½cupwalnuts, chopped or crushed walnuts if you prefer
2tablespoonpowdered sugar
Instructions
Preheat oven to 350 f. Prepare an 8-inch baking pan with non-stick spray.
In a large mixing bowl, cream together the butter and sugar. Add in the applesauce and vanilla (if using) and mix well. Add in the flour, baking soda , spices and salt. Mix just until combined. Fold in the walnuts and raisins.
Pour the batter into your prepared dish and bake for 40-45 minutes, until a toothpick inserted in the center comes out clean. Sprinkle with the powdered sugar, cut and serve!
