Ingredients
2lbs.Boneless shoulder roast or Boston butt roast meat cut into large chunks
Place 2 tablespoons of olive oil in the bottom of the Instant Pot, and turn it to the saute function.
Add the pork, seasoned with salt and pepper to the heated Instant Pot.
Sprinkle the Italian seasoning and garlic powder over the pork, and saute until it is browned on all sides.
In a bowl, whisk together the Swerve brown sugar substitute, soy sauce, balsamic vinegar and water.
Pour the sauce mixture over the pork in the Instant Pot, and place the lid on, being sure that the pressure valve is turned to the “sealing” position.
Set the Instant Pot to cook on the manual setting for 25 minutes.
Once the time is complete, let the Instant Pot go through a slow release for 5 minutes before carefully turning the pressure valve to the “venting” position to release any additional pressure.
Remove the pork from the Instant Pot, and shred with two forks.
Set the Instant Pot back to the saute function, and add the heavy whipping cream to the sauce, whisking thoroughly.
Continue to let the sauce saute and cook down until it thickens.
Add the shredded pork back to the Instant Pot, and toss to coat in the sauce before serving.
