Ingredients
1
large ripe avocado
⅔
cup
mayonnaise
2
tablespoon
homemade ranch seasoning
or a dry ranch dressing mix packet
2
tablespoon
oil
I used avocado, but olive oil is fine
zest of one lime
juice of ½ a lime
1 ½
tablespoon
apple cider vinegar
½
teaspoon
sea salt
2
tablespoons
water
Instructions
Zest your lime, then slice in half and set aside. You will only be using the juice of half the lime.
Slice avocado in half and remove pit. Scoop the flesh out into your blender or food processor.
Add the rest of the ingredients into the blender.
Pulse until smooth.
Ideally, chill the dressing for half an hour or more before serving, but if you want to dig right in... go for it.
Notes
A few people thought this could use some cilantro to match the namesake exactly. So you may wish to toss in a little fresh cilantro when blending.
