Place the mozzarella and cream cheeses in a microwave safe bowl, and heat at 30 second intervals until completely melted and combined.
In a mixing bowl, combine the almond flour, baking soda, baking powder and xanthan gum.
Add the cheese mixture to the dry ingredients, and knead with your hands until completely incorporated.
Blend an egg into the dough mixture on high until well combined.
Place the dough into the freezer to set for 30 minutes.
Preheat the oven to 350 degrees.
Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
Add the meat, onions and peppers to the skillet, and season with salt and pepper to taste. Saute until the meat is cooked to your liking, and the vegetables are tender. Remove from the heat, and set aside.
Form the chilled dough into eight equal sized balls.
Flatten each dough ball, and place a tablespoon or so of the filling mixture into the center. Form the dough up and around the filling until it is completely covered.
Bake the filled dough balls for 15-20 minutes until browned and completely cooked through.
Brush the bread bites with the melted butter, and sprinkle with parsley flakes before serving.
