Ingredients
½cupbutter
½cuppecans
2tablespoonspowdered sugar
2eggs
¼teaspoonsalt
1teaspoonpure vanilla extract or almond extract if you prefer
1cupall purpose flour
1tablespoonlemon zest
powdered sugar for rolling
Instructions
Place soft butter, cut into cubes, in a bowl. Add powdered sugar.
Beat the powdered sugar and butter for a couple of minutes. Then add eggs, one at a time, and vanilla.
Add all-purpose flour mixed with salt and zest. Stir. The dough should have a sticky texture and not be too dense.
Grind the pecans with a knife or blender. Add the chopped nuts to the bowl of dough and fold in with a spatula.
Cover the bowl of cookie dough with cling wrap and refrigerate for half an hour.
Preheat the oven to 350 F. Line baking sheets with parchment paper or a silicone baking mat.
Form into 1-inch balls and place on a prepared baking sheets, one inch apart.
Bake cookies for 13-15 minutes until light golden brown, then let cool for 5 minutes on the cookie sheet.
Pour powdered sugar into a shallow bowl. Roll the baked cookies in the powdered sugar and place on a wire rack to cool completely.
Once the cookies have cooled, roll them in the sugar again to make the snowy coating. The cookies are ready.
