Ingredients
1tablespoonbutter
1tablespoonolive oil
2-3grated carrots
¾cupplain yogurtNote: You can use a combination of regular yogurt or strained yogurt (süzme yoğurt or Greek yogurt for a creamier texture.)
1clovegarlic mincedor crushed garlic
2tablespoonfresh dill finely chopped
2tablespoonwalnuts chopped
1tbsfresh lemon juice
½teaspoonchili flakes
Salt and pepper to taste
Instructions
Heat the butter and oil in a frying pan over medium-high heat.
Add the grated carrot and garlic, then cook, stirring frequently, until the carrots soften (about 5 minutes). The point of this step is to lightly brown the carrots to develop rich flavors. If you have any remaining carrots, you can use them in other recipes.
Let the mixture cool completely. In a bowl, add the cooked carrots to the yogurt and chopped walnuts. For a more creamy dip, use strained yoghurt.
Stir in the lemon juice, finely chopped dill, salt, and pepper. Adjust the seasoning to taste for balanced flavors. Combine well and chill the mixture for about 30 minutes.
Transfer the dip to a serving dish, decorate with a drizzle of olive oil, walnuts, and a sprinkle of chili flakes before you serve. Havuç tarator can be prepared in advance and stored in the fridge for a few days. Enjoy!!
