Ingredients
4potatoesall-purpose, red, white or Yukon Gold
3 tablespoonolive oiluse avocado or canola oil if you prefer
½teaspoonMrs. Dashor other salt-free seasoning blend (I used the Onion & Herb Mrs. Dash)
generous pinches of Kosher saltpaprika & white pepper
Instructions
Preheat oven to 375°F.
Cut potatoes into narrow wedges.
Whisk together oil and all the seasonings in a large bowl.
Drop potatoes in and toss potatoes until thoroughly coated.
Take out potatoes and arrange on a baking sheet, avoid overlap. (Don't just dump them on the pan, you will get more oil than you need.
Bake for 10 minutes, then increase heat to 400°F. or turn on the convection if you have that feature. Roasting at high heat is key to achieving a crispy potato.
Continue to roast potatoes for 15 minutes or until potatoes are golden and fork tender inside.
Transfer potatoes to a serving platter or basket to enjoy.
