- ½ cup milk
- ½ cup molasses
- ¼ cup butter, melted

- ¼ cup butter, melted
- ½ cup flour
Directions
Preheat the oven to 425 degrees F. Place paper liners in a muffin pan or grease with non-stick cooking spray. Set aside.
In a large bowl, combine flour, salt, baking powder, baking soda, cinnamon, ginger and brown sugar. Whisk to mix then set aside.
In a medium bowl, mix together eggs, milk and butter. Stir in molasses.
Mix wet ingredients slowly into the dry ingredients until just incorporated. Set aside.
In a small bowl combine brown sugar, cinnamon, ginger and flour for the streusel. Add melted butter and mix until crumbly.
Use a spoon or cookie scoop to fill each muffin cup with muffin batter, ¾ of the way.
