Almond Milk
Many people turn to almond milk as a dairy-free, vegan substitute for the more traditional milk. It is a great nutritional choice as well, being high in monounsaturated fat, Vitamin E, Manganese and Magnesium.
When you make almond milk at home it will contain calcium, though it is not at the high levels of store bought which is fortified during the manufacturing process.

Put the almonds into the instant pot and pour in 6 cups of water. Place the lid on and twist to lock then seal pressure valve. Cook the almonds on high pressure for 3 minutes. Manually release pressure when done.
Drain and rinse almonds. Remove the skins by pinching the almonds out of them.
Place skinned almonds in blender with 5 cups of water and blend until it resembles milk. Add sweetener to taste.
Pour contents of blender over cheesecloth*. Make sure you have a bowl to catch the milk. Squeeze cheese cloth until no more milk is extracted.
