- 16 oz Ziti pasta (yes, you can use penne, shells, or even fettuccini noodles if you prefer)
- 16 oz creamy Alfredo sauce (having some extra sauce on-hand is also a good idea)
- 8 oz Sour cream
- 1 cup shredded Mozzarella cheese, or Italian cheese blend
- ¼ cup grated Parmesan cheese
- 16 oz Ricotta cheese
- 2 large eggs
- 2 tablespoons of parsley or Italian seasoning
Preparing
Put the uncooked ziti in a pot of water that is rapidly boiling. Cook until al dente, leaning toward under done. Drain the pasta pot and put aside.
Preheat oven to 375 degrees F.
In a mixing bowl, add cooked pasta, Alfredo sauce, and sour cream. Stir until pasta is coated.
Coat a 9 x 13 baking dish with nonstick cooking spray, then dump in half of the pasta mixture.
In separate mixing bowl combine the ricotta cheese, parmesan, eggs and 1 tablespoon of the parsley. Mix until combined.
Pour mixture over the pasta in the pan and spread out evenly with a spatula to cover pasta.
Spread the remaining pasta over this layer, then sprinkle the mozzarella cheese and parsley over the pasta.
Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden brown on top.
Allow to cool for 15 minutes before serving. Top with fresh chopped basil and or Parmesan cheese.

This cheesy vegetarian pasta casserole is certainly hearty enough to eat as a meal. I doubled the recipe and added these things to the ricotta layer: 6 ounce jar of pesto, 1/4 teaspoon of salt (should have added a little more), progreso Italian bread crumbs.
1 tablespoon bread crumbs mixed into casserole and 1-2 tablespoons sprinkled on top prior to baking. Also added Italian seasoning (with salt) to top of casserole.
