This refreshing Ginger Coconut Lemonade recipe is easy to prepare and a perfect summer sipper by the pool or served by the pitcher at gatherings.
The addition of the coconut milk smooths the bite of the lemon juice and spicy ginger. This unique homemade lemonade is perfect for hot summer days.

How to Make Ginger Coconut Lemonade
Here we will make one glass of this coconut lemonade with ginger syrup, but volumes for making a pitcher can be found below as well.

Equipment: you will need a12oz highball or Collins glass and a cocktail shaker
Ingredients for the Lemonade

- 2 ounces light coconut milk
- 1 ½ ounces fresh lemon juice
- 1 ½ ounces ginger syrup Make your own fresh ginger simple syrup with my ginger syrup recipe
- 1 ounce water
- Crushed ice cubes to serve
Directions

Combine lemon juice, ginger syrup, coconut milk, and water in a shaker.

Add ice and shake well for a full minute to dilute the beverage.

Fill a highball glass with crushed ice and strain the lemonade into it. Garnish with lemon slices.
Notes: *If not using crushed ice or not shaking, increase water to 2oz.
Excellent for making in large pitchers or as a punch. Use the 2 oz/56ml of water per serving.
For 6 servings:
12oz light coconut milk
9oz lemon juice
9oz ginger syrup
12oz water

Instructions
- Combine lemon juice, ginger syrup, coconut milk, and water in a shaker.
- Top with ice and shake well for a full minute to dilute.
- Strain into a highball glass filled with crushed ice. Garnish with a lemon wheel.
