I wanted something refreshing and mildly sweet, with just a bit of tang, and that is exactly what I ended out with. This ice pops recipe is not for your sweet tooth moments, the sweetness is subtle. These Coconut Lime Ice Pops are just the thing when relaxing from the heat, or for a little refreshment after a workout.
I thought these would be "mommy's pops", but although Lil' Foodie doesn't care much for straight coconut water freeze pops, she likes these coconut-lime ones quite well. I just can't win.

Coconut-Lime Ice Pops Recipe
Ingredients
- 1 cup coconut water with pulp
- 2 tbs fresh lime juice
- zest of ¼ of a lime
Instructions
- Mix ingredients.
- To evenly distribute the lime zest and coconut pulp freeze the pops in layers, pouring a little in and letting it set, then topping with more.
