These Coconut Lime Ice Pops are just the thing when relaxing from the heat, or for a little refreshment after a workout.
I thought these would be “mommy’s pops”, but although Lil’ Foodie doesn’t care much for straight coconut water freeze pops, she likes these coconut-lime ones quite well. I just can’t win.

Coconut-Lime Ice Pops Recipe
Low calorie ice pop treat that will give you the feel of a day at the spa.
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 4
- 1 cup coconut water with pulp
- 2 tbs fresh lime juice
- zest of 1/4 of a lime
- Mix ingredients.
- To evenly distribute the lime zest and coconut pulp freeze the pops in layers, pouring a little in and letting it set, then topping with more.
