How to Make Pickled Green Beans
Time to get into pickling and canning high gear. The late summer harvest bounty is here, and the perfect opportunity to make some not-so-everyday recipes. Why not start with this easy Pickled Dill Green Beans recipe. It would actually make a good first time canning project, as the brine works as a preservative for the green beans. Keep a couple jars of the pickled green beans for yourself and pass a few on to those without gardens.

Pickled Dill Green Beans
Ingredients
- 1 pound Fresh Green Beans
- 2 ½ cups of water
- 2 ½ cups of vinegar
- 4 garlic cloves
- 3 tbs salt
- 4 sprigs Fresh Dill
- 4 16 oz mason jars.
Instructions
- Remove ends of green beans. In a large pot steam green beans for 15 minutes. Remove and run under ice-cold water for 5 minutes or until cooled off. In another pot place water, vinegar and salt. Bring to a boil let boil for 10 minutes.
- Place beans one clove of garlic and a sprig of dill in a mason jar. Fill with Vinegar water. Place lid on tight. Store for 7 days in a cool place. Enjoy!

I've never tried pickled green beans. I've not tried canning before either. But it's something I would like to do. Next year I want to have a garden and stock a pantry with items I've prepared. I know that will be very rewarding and worth the work.

I don't know how that would turn out. I would think you would fare better with using frozen ones, but I have not tried either.
