Looking for a versatile vegetarian dip for your next gathering? My Artichoke Bean Dip recipe is just the thing. This flavorful dip can be made in about 10-15 minutes using pantry staples like canned white beans and canned artichoke hearts, making it a quick and convenient option for parties or snacks.

Artichoke White Bean Dip with Sweet Onion
After buying a lot of canned artichokes last time I popped into our local discount store, I searched for a new recipe to use some in as soon as I got home. I found an old Cooking Light recipe on their website for a Sweet Onion, White Bean and Artichoke Dip (recipe link). Canned artichoke hearts are a convenient, ready-to-use ingredient that simplifies preparation and ensures a consistent flavor profile. I enjoy a good bean dip, and sweet onions and artichokes are favorites of mine, so I picked up some white beans—another pantry staple—and dug out the food processor and decided to make my own spin on this artichoke bean dip recipe.
Beyond the three primary ingredients, I veered off quite a bit on this vegetarian bean dip recipe. I adjusted to my personal taste, scratching a number of seasonings and reducing the massive quantity of garlic called for in the original version. The recipe was circa 2004, I thought the 1990’s garlic obsession in American food had simmered down a bit by then, but it was live and kicking here.
For a deeper, tangier flavor, you can use marinated artichoke hearts or add a few tablespoons of artichoke marinade. The combination of white beans and artichokes creates a creamy texture without the need for dairy, making this a healthy dish that is both vegan and can be made gluten free. White beans provide about 11 grams of protein per serving and are rich in iron and potassium, while artichokes are high in fiber and antioxidants. Both ingredients are low in fat, making this dip a nutritious choice.

Serve this creamy vegan dip with assorted vegetables, pita chips, crispy crackers, or toasted bread, or as part of a mezze platter. It also works well as a sauce for pasta or as a spread on bagels or toast. Garnish with fresh herbs, lemon zest, or red pepper flakes for added flavor and visual appeal. For a richer experience, serve the dip warm from the oven and top with cheese such as Parmesan, feta, cream cheese, or mozzarella cheese. You can also blend in tahini or Greek yogurt for extra creaminess, or use roasted garlic for a deeper flavor. Incorporating a pinch of cayenne or red pepper flakes adds heat.
Storage
Leftover dip can be stored in an airtight container in the refrigerator for 3 to 4 days, and it can be made up to 3 days in advance.
This creamy vegan dip achieves its texture without dairy by pureeing beans. Check out more recipes or other recipes for dips and appetizers to expand your repertoire!
Benefits of White Beans
White beans, especially cannellini beans, are a powerhouse ingredient that brings both nutrition and flavor to your kitchen. Packed with plant-based protein and dietary fiber, these beans help keep you feeling full and satisfied, making them a smart choice for a healthy dip or appetizer. Their high fiber content supports heart health by helping to lower cholesterol and regulate blood sugar, while their low saturated fat and calorie count make them ideal for anyone watching their weight.

When you blend white beans with olive oil, lemon juice, and artichoke hearts, you get a creamy texture that’s perfect for dipping veggies or spreading on crackers. The mild, slightly nutty flavor of cannellini beans pairs beautifully with the tang of fresh lemon juice, the richness of olive oil, and the subtle earthiness of artichoke hearts. Adding a touch of lemon zest, fresh garlic, and chopped fresh parsley not only boosts the flavor but also adds a burst of freshness to your artichoke white bean dip.
Canned white beans are a convenient pantry staple for whipping up a quick and healthy dip. Just be sure to choose low-sodium options and rinse them well to reduce excess salt. This simple step helps you control the salt content in your bean dip while still enjoying all the creamy goodness. Whether you’re making a classic artichoke white bean dip or experimenting with your own flavor combinations, white beans are a versatile base that delivers both nutrition and taste.
So next time you’re looking for a delicious appetizer or a healthy snack, reach for those canned white beans, a splash of lemon juice, and a drizzle of olive oil. With a few fresh herbs and a hint of garlic, you’ll have a flavorful, creamy dip that’s as good for you as it is tasty.
