Pineapple Mojito
The Mojito is a popular summer drink that originated in Cuba. The original combines rum, lime, fresh mint and sugar. This version adds a delightful pineapple element that blends wonderfully with the classic flavors. It makes for a fun tropical twist and boosts it's summery poolside appeal.
How to Make a Pineapple Mojito
While still easy to make, a mojito there is a little more to making one than tossing liquids in a cocktail shaker. Let me guide you through it and you will be a pro in no time. Printable recipe card below.
First chop some fresh pineapple into bite sized bits. Since you are already chopping up pineapple tidbits, why not make a batch of my Pineapple Salsa to go with you mojitos!
Place the pineapple chinks in a mortar with sugar and mint leaves.
Muddle with the pestle until mostly ground up, but no need to be fussy.
Dump the ground mixture into a large jar or pitcher.
Add rum.
Then pour in the pineapple juice. Shake or stir with a wooden spoon.
Top with the club soda.
Serve from the pitcher with ice or over glasses filled with ice.
Garnish with pineapple, lime or mint sprigs.
No Mortar & Pestle?
You can get by in a pinch pulsing the mixture in a food processor (just one or two very quick pulses), but the old school method of muddling the ingredients together by lightly mashing is preferable and once you have a mortar and pestle it generally lasts for life. It's a minor investment and also comes in handy prepping spices and fresh herbs for cooking.

Pineapple Mojito Recipe
Ingredients
- ½ cup fresh pineapple chunks
- 1 tablespoon sugar or simple syrup to taste if you prefer
- 6 mint leaves chopped
- ½ lime juiced
- 2 cups pineapple juice
- 2 cups club soda
- 4 ounces white rum or gold rum if you prefer
- fresh ice
Instructions
- In a large mortar and pestle, add in pineapple, sugar, mint leaves, and lime juice. Gently smash ingredients together with the pestle, until pineapple is creamy and mint leaves have bruised.
- Add pineapple mix to a small pitcher or very large mason jar.
- Next add in pineapple juice, club soda, and rum. Stir together gently. Taste and add more sugar if desired.
- Pour over 2 ice filled cups.
- Garnish mint sprigs, lime wedges and/or pineapple.
