Homemade Pumpkin Spice Syrup
It always surprises me how many people buy flavored syrups for their coffee beverages and desserts. They are just simple syrup with flavoring, which is quite easy to make yourself. It's just sugar water.
Simple Syrup Ratio
Simple syrup is sugar melted in boiling water, typically in a 1 to 1 ratio. Rich simple syrup to 2 parts sugar to 1 part water and is what I use here.
You can of course adjust the ratio down for thinner syrup if you prefer. I like the versatility of the thicker sweet syrup, which can be used as a sauce or dessert topping too.
Natural Pumpkin Spice Flavor
For natural seasonal flavors, I've added a little real pumpkin puree, my own homemade pumpkin pie spice (Made with these warm spices: cinnamon, nutmeg, ginger, allspice and cloves) and vanilla extract to create a delicious flavored syrup for my lattes and other fall coffee drinks.
It does taste like pumpkin flavored syrup used in a Starbucks Pumpkin Spice Latte.
To Strain or Not
You then have the option to strain the mixture or use it just as it is, if a little spices sediment doesn't bother you. Honestly, the straining part is a little bit of a hassle if you don't have a fine mesh metal strainer or extra nut milk bag* on hand.
*Keep in mind the bag may maintain some of the spice fragrance after use.
Uses for Pumpkin Spice Syrup
Of course you can make pumpkin spice lattes with this syrup (though Starbucks now calls theirs a sauce). You are far from limited to fall coffee drinks though. Drizzle the spiced pumpkin flavor syrup over desserts, on hot or cold drinks with whipped cream, swirl it into oatmeal or yogurt, use it in place of maple syrup over your pancakes and waffles or even as a sauce.
Add it anywhere some sweet pumpkin flavor could be tasty, even in tea or make flavored milk! I love to use it to make pumpkin spice holiday cocktails myself, such as a Pumpkin Spice Martini.
How to Make Pumpkin Spice Syrup
As I indicated above making the pumpkin spiced syrup is easy and only takes a few minutes. There is no need to wait until September to get your Pumpkin Spice coffee treats. Follow along here or jump down to print recipe.
The recipe makes about a pint of syrup. So that would be roughly 32 tablespoon servings and plenty to make a lot of copycat Starbucks Pumpkin Spice Latte drinks.

Ingredients needed to make the syrup:
- 1 cup water
- 2 cups granulated or brown sugar
- 2 tablespoons pumpkin pie spice
- ¼ cup pumpkin puree
- 1 teaspoon pure vanilla extract
- pinch of salt (optional)
Instructions:
Bring the water to a boil in a sauce pan and immediately add the sugar. Reduce heat to medium and stir until the crystals are completely dissolved.
Stir in the pumpkin pie spice and pumpkin puree simmer for a minute or two, then take off burner.
Finally stir in the vanilla.
Use a metal strainer, muslin, single layer of cheesecloth or skip straining altogether (shake before each use if you don't strain).
Pour into an airtight glass jar or bottle. Seal the container. Once cool, store in the refrigerator.
If sealed well and placed in fridge shortly after it cools to room temperature the syrup should be good for up to a week.
Sugar Free Pumpkin Spice Syrup
Making a diabetic-friendly keto pumpkin spice syrup is equally as easy to make. The low carb sweetener allulose is a perfect choice for making syrups as it is one of the few that pretty much acts like sugar, without a glucose spike.
Most store bought sugar free syrups use sweeteners that are not ideal for keto dieters.
Use it to make your own homemade keto pumpkin spice latte starbucks copycat with natural flavors! Don't forget your whipped cream on top (use heavy cream and whip it yourself), that deserves a drizzle of syrup too.

Equipment
- Fine mesh metal strainer, nut milk bag, or straining cloth (optional)

- 1 cup water
- 2 cups sugar* for sugar-free syrup use allulose instead**
- 2 tablespoons pumpkin pie spice
- ¼ cup pumpkin puree
- 1 teaspoon vanilla extract

- Stir in the pumpkin pie spice and puree. Simmer for 1-2 minutes, then take off burner. Once off the heat, stir in the vanilla.
- Pour into an airtight container, such as a glass bottle or jar, use a metal strainer, nut milk bag, muslin, single layer of cheesecloth or skip straining altogether (shake before each use if you don't strain).
- Seal jar. Once cool, store in the refrigerator.
