The recipe makes 9 blondie bars.
Prep Time: 10 mins | Bake Time: 30 mins
Ingredients:
Here is everything you will need to make the blondie recipe.
Equipment: 9x9 inch Square Baking Dish, Parchment Paper (nonstick spray for baking can be used but the paper is preferable)
- ⅓ cup unsalted butter, melted
- 1 cup brown sugar
- ⅓ cup creamy peanut butter
- ½ teaspoon vanilla extract
- 2 eggs
- ½ teaspoon salt
- 1 cup all purpose flour
- ½ teaspoon baking powder
- 8 ounce bar of dark chocolate, chopped (or semi-sweet or milk chocolate chips)
- 9 Reese’s cups
Directions
Preheat the oven to 350 degrees F. Prepare a baking dish with parchment paper or baking spray and set aside.
In a mixing bowl, add the melted butter and brown sugar. Whisk together well.
Add the smooth peanut butter, vanilla and eggs. Whisk again until the ingredients are blended evenly.
Add the salt, flour and baking powder all at once to the wet ingredients. Fold together until the dry ingredients are incorporated and a thick batter is formed.
Fold in the chopped chocolate bar with the peanut butter mixture.
Pour this batter into the prepared baking dish and spread out evenly with the back of a spoon or a rubber spatula.
Press Reese’s peanut butter cups into the blondie dough, creating a 3x3 grid or peanut butter cups.
Bake in the oven for 30 minutes or until golden brown and a toothpick inserted comes out clean.
Let these cool for 20 minutes before removing from the pan. Then cut into nine square peanut butter bars with one candy cup in each.
Serve as is or slightly warm with a scoop of ice cream on top.
Variations
Here are a few simple swaps you can make in the recipe to suit your personal preferences or what you have in the pantry.
- Vegetable oil or other flavorless oil can be swapped for the butter. The result won't be as rich in flavor, but will still be quite tasty.
- Peanut butter chips or extra chopped peanut butter cups can be swapped for the chocolate chips/chunks. White chocolate chips are another option.
- For added texture, try crunchy peanut butter in the blondies. Add an extra tablespoon to make up for the peanut bits.
- For gluten-free blondies simply swap a 1-to-1 gluten free flour.
- For added flavor use brown butter in the recipe. It just takes a few minutes and a skillet to make brown butter.
Storing
Leftover blondies should be sealed in an airtight container once they have fully cooled. They will last up to two days sealed at room temperature and up to a week in the fridge. For longer storage, freeze the peanut butter blondies. They will last in the freezer for up to 3 months.
