There is nothing like an indulgent frosty treat on a balmy summer day, especially when you can indulge without any guilt at all. This Skinny Coconut-Berry Watercolor Smoothie not only fits that bill, but it comes with a neat visual effect too. It was the result of me playing around with coconut milk smoothies while I was sick this week. Summer colds have a tendency to sap my ambition to cook, so it was a smoothie fest for me. The gentle swirling of the semi-frozen smoothie liquid seeping through & absorbing into the dehydrated coconut layered between the two simple smoothie blends was fun, so I picked it to share with you.
Thanks to coconut milk, the use of organic frozen berries, stevia as a sweetener & reduced fat dehydrated coconut, this vegan drink is healthy, low in calories, low in fat & sugar and a good source of calcium, fiber & a host of other nutrients.

Skinny Coconut-Berry Watercolor Smoothie
Ingredients
Blueberry Layer
- 1/3 cup frozen blueberries
- 1/2 cup unsweetened Coconut Milk
- 1 packet stevia or 1-2 servings to taste if using pure liquid or powder stevia
Middle Layer
- 2 tbs unsweetened reduced fat dehydrated coconut
Strawberry Layer
- 1/3 cup frozen strawberries unsweetened
- 1/2 cup unsweetened Coconut Milk
- 1 packet stevia or 1-2 servings to taste if using pure liquid or powder stevia
Instructions
- Place ingredients for the first layer in blender and pulse until smooth.
- Pour into glass (try not to get it on sides if you can avoid).
- Sprinkle the dehydrated coconut over the layer evenly. 1/4 to 1/2 inch deep. (If your glass is wider you may need a little more)
- Give the blender a quick rinse, then blend the strawberry layer. Pour it over the coconut flakes.
- Serve promptly.
