There has been a lot of talk about exotic (and often expensive) "Super foods" in recent years. Although I am an adventurous eater, and can be a bit of a mad scientist in the kitchen at times, there is something to be said for familiar foods and flavors. Blueberries are a nutritional powerhouse, that we are all familiar with. For me, they bring up many childhood memories. I grew up in a very old farm house and blueberry bushes and a couple apple trees remained on the property from bygone days. Every summer, we would pick the berries, and sometimes we would still have enough to make a pie or some blueberry jam after munching out on them. The jam in particular was neat, because it extended the bounty into the fall, when our mom would make us PB&J sandwiches for school. Since I'm on a mad get the holiday pounds off quest, the sugar, fat and carbs in a PB & J aren't on the menu for me at the moment. I thought for a few minutes about what I should have from the sandwich, and what the parts were that I craved. The smell and taste of the blueberries & peanut butter, washed down with a cold glass of milk, that is what I wanted. The bread didn't matter much, so a smoothie seemed a fitting solution. I pulled out some frozen blueberries, powdered peanut butter & vanilla almond milk, fully expecting to need to add sweetener or something... but these 3 simple ingredients made such a yummy and nutritious smoothie, there was no need for anything else. In this easy recipe, the powdered peanut butter provides low fat protein and the almond milk is loaded with calcium, but the real nutritional star is the blueberries. These little blue dynamos provide 25% of your recommended daily calcium intake per serving. They are a great source of fiber & manganese, as well as antioxidants. All that ready in 2 minutes is pretty great in my book.
Blueberry Peanut Butter Smoothie
Ingredients
- 1 cup frozen blueberries
- 1 cup unsweetened vanilla almond milk
- 2 tbs powdered peanut butter*
Instructions
- Add ingredients to blender.
- Pulse until smooth. Serve.

I can honestly say I have never ever heard of powdered peanut butter or a P & J smoothie. I will have to give this a try. I am sure my son would be interested in trying this. However, I know he would turn up his nose at the almond milk as we have had it and he doesn't like it. I will have to improvise by not telling him at all.

I am a HUGE PB&J addict and can not believe how simple this recipe is. I plan to use organic fat free milk but add some vanilla protein powder for an extra kick!
