Date energy balls are a nutritious way for your family to enjoy a treat. These healthy no bake treats are kicked up a notch with the addition of gingerbread holiday spices and a drizzle of dark chocolate.

How to Make Energy Balls with Dates
Let's make the no bake date balls. Here is a quick guide with pictures. Printable recipe card cam be found below.
Ingredients you will need
- 1 cup medjool dates
- ¾ cup pecans
- 1 tablespoon molasses
- 1 tablespoon ground flaxseed
- 1 teaspoon cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- Optional: 1 oz. 70% dark chocolate
Place dates on a cutting board and slice down the center to remove the pits.
Roughly chop up the pitted dates and place them in a food processor. Pulse a few times until they break down into a thick paste consistency.
Add the remaining ingredients with the exception of the chocolate to the food processor and pulse until all ingredients are broken down and well incorporated.
Scoop up ingredients in a teaspoon and roll into a ball using clean hands. Once you form balls, place them onto a sheet of parchment on a plate.
Place the dark chocolate in a small glass bowl and microwave until melted. Pour the melted chocolate into a small Ziploc bag and cut off just the edge of one corner.
Drizzle the melted chocolate over the energy balls. Place in the fridge to allow the chocolate to harden.
Once chocolate is firm, they are ready to serve.
Additions and Swaps for the Energy Ball Recipe
I am a big proponent of adjusting recipes to make them your own and these no bake energy bites are easy to make changes to while still having great results. Here are a few suggestions:
- Toss in a few mini chocolate chips or a tablespoon of cocoa powder for a chocolate pick-me-up.
- Roll the date balls in sesame seeds if they seem a little sticky to the touch. This can happen if there is more moisture in your Medjool dates or even on a very humid day.
- Extend the recipe with a ¼ cup of natural peanut butter, sunflower butter or nut butter and add ⅔ to 1 cup of rolled oats or dry unsweetened shredded coconut to make up for the textural difference.
