The recipe makes 4 servings.
Prep Time: 10 mins Cooking Time: 25 mins
Ingredients:
Here is everything you need to make the sheet pan sausage recipe.
- 14-ounce package kielbasa, cut into rounds (½ inch slices)
- 2 pounds Yukon Gold potatoes, washed and diced into ½ -inch cubes (swap red skinned potatoes if you prefer)
- 2 bell peppers, sliced into ½ inch strips (used ½ a red pepper, ½ an orange pepper, ½ a yellow pepper and ½ a green bell pepper, use what ever type you like, poblano peppers are also a good choice)
- 2 tablespoons olive oil
- ½ teaspoon paprika
- ½ teaspoon salt (Kosher, Sea or Pink Himalayan)
- ½ teaspoon black pepper
Directions:
Preheat the oven to 400F.
On a large sheet pan, toss the kielbasa rounds, ½-inch cubed potatoes, and the chopped bell peppers with the olive oil. Spread the ingredients out in an even single layer on the baking sheet with the kielbasa together in the center, the potatoes on one end, and the bell peppers on the other end of the sheet pan.
Sprinkle the potatoes and bell peppers with the paprika and season with salt and pepper.
Place baking sheet in preheated oven and bake for 20 minutes. Turn the kielbasa and continue baking until the potatoes are cooked through and the sausage is golden brown, about 5-10 more minutes.
Remove the pan from the oven and serve the kielbasa sheet pan dinner hot.
Variations on the Recipe
There are innumerous ways to make this simple recipe your own. Here are just a few suggestions:
- Swap sweet potato or butternut squash for the potatoes in the recipe. Other root vegetables, such as carrot, turnip or parsnip make a good substitute as well.
- Add sweet or yellow onion to the dish. (cut pieces at least as large as the peppers, a little larger is even better)
- Not in the mood for peppers, substitute fresh green beans, broccoli florets (see my Sheet Pan Sausage and Vegetables Recipe) or wedges of zucchini.
- You can also swap the kielbasa for another kind of smoked sausage if you prefer.
- If you are a garlic lover, add a ½ teaspoon garlic powder when seasoning (or 2 cloves garlic, chopped not minced).
- It does not matter if you peel the potatoes. Use baby potatoes if you like. but you will still probably have to halve or quarter many of them, or they will take longer than the 20-30 minutes the sausage and sweet and green peppers take to cook.
- If you like to do your meal prep ahead, simply cut up the ingredients and place in a ziploc baggy ready to dump onto the pan. You could even add the oil and seasonings and shake the bake to coat. This make the one-pan meal a dump and bake dinner when you are ready to cook.
Easy Clean-up Tip
Sheet pan dinners are already pretty fuss-free to make, but you can cut back on the work even more. Line the baking sheet with parchment paper or aluminum foil for a quick and easy clean-up after the meal!
Serving
Serve the dinner hot, fresh out of the oven. You can let it rest in the pan a few minutes before serving, but it will cool off pretty quick.
For condiments: I like to serve this with my seasoned sour cream dipping sauce. Hot sauce, honey mustard dressing or fry sauce are also yummy to dunk the sausage and roasted vegetables in.

Storing
Store leftovers in an airtight container, promptly after they have cooled to room temperature. They will last in the fridge for up to 3-4 days. For longer term storage, freeze for up to 3 months.
This recipe, is quite similar to my favorite kielbasa recipe, with similar ingredients, prepared on the stove top in a skillet. For other options to prepare Polish sausage, try my Kielbasa and Cabbage, Pierogies and Kielbasa or Instant Pot Kielbasa Pasta.
