Roasted Carrot Hummus is a fun twist on classic hummus that features sweet roasted carrots. The carrots which develop a deep caramelized flavor after roasting, adding natural sweetness and vibrant color to the bean dip. The addition of roasted vegetables not only changes the flavor but also makes the hummus visually appealing. The homemade hummus is gluten free, dairy free, and nutrient-rich, making it perfect for a variety of dietary needs.
Chickpeas are a staple in hummus, while tahini (sesame paste) adds a nutty depth. Key spices like ground cumin, smoked paprika, and black pepper, along with warm spices, enhance the comforting, aromatic qualities of this appetizer.
Roasted Carrot Hummus
I’ve been a bit hooked on sweet roasted carrots lately and never make any secret of my love of legumes, so combining the two is a marriage made in heaven in my book. Since I had 2 cans of chick peas on hand and a few carrots in the back of the veggie bin, a roasted carrot hummus recipe was soon in the works.
As a starting point, I started with a classic hummus recipe rather than how I usually make my hummus (since I tend to go a bit heavy on the lemon). I did need to make more alterations beyond adding the carrots, to reach the right hummus consistency while keeping the flavors in-line. Most of these were related to needing more liquid to compensate for the roasted carrots.
Tip: For extra creaminess, you can process until smooth, adding extra olive oil or ice-cold water to achieve your desired consistency.
The recipe made a nice big batch of carrot hummus. Roasting the carrot pieces and garlic on parchment paper brings out their sweetness and ensures easy cleanup. The carrots become tender and lightly caramelized, perfect for blending. After roasting, blend the carrots, and other ingredients until smooth and creamy. Adjust seasoning with more salt, adding black pepper, smoked paprika or cumin to taste are also great ways to season this hummus dip.
Serving
Serve this roasted carrot hummus as an appetizer with warm pita bread, pita bread, warm pita, pita chips, root vegetable chips, fresh vegetables, or raw vegetables for dipping. It’s also great for meal prep, since it works great as a lunch dip or sandwich spread.
For a beautiful presentation and extra flavor, drizzle a little olive oil and sprinkle smoked paprika and fresh herbs on top just before serving. Toasted pine nuts, walnuts or seeds can add a nice satisfying crunch to the dip. For a spicy kick, try adding harissa paste.
This homemade hummus is a flavorful, healthy alternative to plain hummus and is perfect for grazing boards, parties, or as a sandwich spread.

Store
Store leftovers in an airtight container in the fridge for easy snacking throughout the week. The sealed dip is good in the fridge for 3-4 days.
Freezing the Roasted Carrot Hummus is an option for longer term storage. It will last for 3-4 months, but will be best in the first month or two. If the hummus separates a bit after thawing stir a little olive oil into it until it has a smooth consistency.

Roasted Carrot Hummus Recipe
Ingredients
- ½ pound carrots
- 2 garlic cloves
- ¼ cup + ½ teaspoon olive oil
- ¼ teaspoon + ½ teaspoon Kosher salt
- 2 15-16 oz cans chick peas (garbanzo beans)
- ¼ cup Sesame Tahini
- â…” cup water
- â…“ cup fresh lemon juice
Instructions
- Preheat oven to 400 degrees.
- Peel carrots. chop off ends and slice on the diagonal into approx 1 inch thick pieces. Peel garlic cloves.
- Mix the carrots & garlic in ½ teaspoon oil and ¼ teaspoon Kosher salt. Lay out on shallow oven safe pan or baking sheet. Roast for 12 minutes, mix them up, and return to oven to roast 8 more minutes. Then set aside to cool.
- Add the roasted carrots and garlic to food processor, along with all the remaining ingredients. Pulse until smooth (you may need to stop & stir it with a spoon or spatula a couple times to get all of the hummus smooth).
