The strawberry chicken salad recipe is a refreshing easy to make meal, perfect after a day at the beach or park with friends and family. There is no cooking involved in this recipe.
I specifically wanted something that was a smarter more upscale alternative to take-out. The ingredients for this recipe can quickly be grabbed at the market on the way back home. This delicious strawberry chicken spinach salad can be ready from start to finish in just 10 minutes!
Fresh spinach, strawberries & scallions, team with rotisserie, pecans and an easy green tea citrus vinaigrette. Friends can help with the simple prep and everyone will enjoy a fresh unique meal. Most of us haven't experienced tea in a salad dressing, but trust me the somewhat unusual flavor choice really works in this salad.
Making the Strawberry Pecan Chicken Salad with Green Tea Citrus Vinaigrette
Simply shake together the dressing ingredients and the dressing will be ready to serve. If you can make it a few hours ahead, itt will improve the dressing by allowing the flavors to meld, but it is not actually necessary. The vinaigrette is mildly sweet with a nice tang from the lime juice.
Once you mix up the dressing, slice the strawberries and scallions, break down and shred the rotisserie chicken.
Assemble the salad.
Shake up the vinaigrette dressing and drizzle over the salad to serve.
Pour some nice cold glasses of Green Tea Lemonade to go with the salad. I chose to garnish with limes and fresh strawberries to tie in with the salad.
Serve some Green Tea Cookies, Strawberry Pie or a Strawberry Ice Box Cake after for dessert after.
Strawberry Pecan Chicken Salad
Ingredients
- 8 cups baby spinach
- 1 pound shredded chicken
- 4 ounces sliced fresh strawberries
- ¼ cup pecans
- sliced scallions
Green Tea Honey Vinaigrette
- ½ teaspoon matcha powder (green tea powder)
- 1 tablespoon honey
- ¼ cup water
- 1 teaspoon whole grain mustard
- ¼ teaspoon sea salt
- 2 teaspoon fresh lime juice ( or lemon juice if you prefer)
- ¼ cup extra virgin olive oil
Instructions
Make the Dressing
- Shake the dressing ingredients together vigorously in a bottle or jar.
Prepare the Salad
- Fill bowl or platter with baby spinach.
- Top with chicken, strawberries, pecans, and scallions, then drizzle with the vinaigrette dressing to serve.
