This Spicy Orange Tuna stir fry with Zucchini was an impromptu recipe I created for dinner tonight. I'd picked up fresh tuna steak yesterday afternoon, and wanted something quick and spicy. This easy tuna stir fry fit the bill.

Here are a few tips on making the recipe your own.
The Orange Stir Fry Sauce
The orange stir fry sauce may seem a bit heavy on the Sambal Olek hot chili paste, but I could almost nosh on this stuff by the spoonful. Try half the amount in yours is you are concerned about the heat.
If you are a garlic fan, add a clove of minced garlic.
The Stir fry Vegetables
While I found the zucchini worked well in the recipe, if you prefer to use more tradition stir fry vegetables in the tuna stir fry, such as bell peppers, sweet onion, pea pods, broccoli florets, thin sliced carrots, bean sprouts or bok choy feel free to make the swap. Keep in mind stir fry times may vary for the vegetables you select.
Serving
Serve the tuna stir fry over steamed rice, fried rice or noodles. For healthier options, choose brown rice or cauliflower rice. A splash of soy sauce, Japanese Yum Yum sauce or fresh lemon juice should be all you need for condiments as the sauce is already flavorful. Some thinly sliced spring onions make an excellent garnish for the dish.

Spicy Orange Tuna with Zucchini
Equipment
- large frying pan or wok
Ingredients
- ½ cup orange juice
- 2 tablespoons soy sauce preferably reduced sodium soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons rice wine vinegar
- ¼ cup Sambal Olek Chili Garlic paste
- ½ pound tuna steak
- 2 teaspoons light olive oil or any high heat oil such as canola or avocado oil
- 1 small zucchini
- ¼ teaspoon sesame oil
Instructions
- Whisk together orange juice, soy sauce, sugar, vinegar & Samabl Olek, in medium sized bowl.
- Cut the tuna into bite size pieces, and add to the sauce, mix well and set aside.
- Slice off ends of zucchini, cut in half lengthwise, then cut into thin slices.
- Place oil in large skillet over med-high heat, once hot add the zucchini slices, stir fry until edges brown a little, but is not fully cooked.
- Use slotted spoon to add the tuna to the pan, leaving most of the sauce in bowl for the moment. Stir Fry tuna until outer surface is cooked, then add the sauce mixture.
- Reduce heat to medium and add the sesame oil. Cook about 4-5 minutes, until tuna and zucchini are cooked, and sauce has thickened.
- Pour the mixture over steamed rice to serve,
