These cute St Patrick's Day Meringue Cookies are surprisingly easy to make. The green tinted meringue is filled with a shallow pool of white chocolate with a simple candy shamrock nestled inside.
Shamrock Meringue Cookies for St Patrick's Day
These gluten free St Patrick's green meringue cookies with shamrocks and white chocolate are a fancy green treat to serve on the holiday. Though the results are impressive the process of making them doesn't require a lot of baking experience. I don't have great piping skills myself, but circles we can do.
These shamrock meringues would make a great homemade St Patrick's Day gift or make them for the office.

How to Make St Patrick's Day Meringue Cookies
Let's go through the process of making this gluten free St. Patrick's Day cookies. The printable recipe card is below.
Ingredients
Here is everything you need to make the shamrock meringue cookies.
- 2 egg whites, room temperature
- ¼ teaspoon cream of tartar
- ½ cup granulated sugar
- 1 drop Kelly green gel food coloring
- ¾ cup white candy melts
- 36 Green M&Ms
- Green decorating frosting
Preparation
Preheat oven to 200 degrees Fahrenheit.
Line a baking sheet with parchment paper and set aside.
Using a stand electric mixer, start beating egg whites and cream of tartar on low.
Slowly add the granulated sugar and increase the mixer speed to high. Beat until the mixture forms stiff peaks. This will take about 10 minutes.
Add one small drop of green gel food coloring to the meringue mixture and beat until the tint is even. This will result in a light green color.
Scoop meringue into a piping bag with Wilton tip #21 attached.
Pipe out circular meringue cookies on lined baking sheet, about 2 inches in diameter.
Once circles are piped out, pipe out a second layer around the circumference to create a cavity in the center.
Bake for 2 hours.
Once time is up, turn off the heat but keep the meringue cookies in the oven for an additional 35 to 45 minutes. Cooling this way is important for good results.
Remove from oven and allow to cool for 5 minutes.
Place candy melts in a bowl and microwave in 30-second intervals until completely melted, making sure to stir between each interval.
Use a spoon to fill the center of each meringue cookie with melted candy.
Place 3 green M&Ms on the melted white chocolate center. Make it look like a clover by placing in a triangular arrangement.
Refrigerate the filled meringue cookies for about 15 minutes.
Attach Wilton icing tip #5 to the green decorating frosting. Frost out a stem underneath each M&M clover. Serve and enjoy!
