Crockpot Lime Chicken with Garlic
This simple slow cooker recipe is likely to become a go-to in your recipe repertoire. It's a super easy dinner to make, with very minimal prep work and the crock pot does the rest for you. Bone-in chicken thighs are a great budget friendly choice and I use them a lot to make organic chicken more affordable for my family. The thighs also hold up very well to long slow cooking without getting dry.

Garlic Lime Chicken, Crock Pot Chicken Thighs Preparation

Ingredients needed for the recipe:
- 4 bone-in chicken thighs
- 1 lime
- 1 cup chicken broth
- 2 cloves garlic minced
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- 2 tablespoons butter
- chopped fresh parsley or cilantro
Chicken thighs on the bone are used rather than chicken breasts, since they work better in the crock pot and are a more frugal choice. Chicken broth and fresh garlic and lime are also used. The dish is seasoned with herbs, salt and pepper.
Salt is not listed in ingredients below, as it may not be necessary if your broth is salty (I used reduced sodium broth in my home).
Make It!
Add chicken and broth to the slow cooker, then squeeze lime juice into the pot.
If you want more color on your chicken, sear the thighs in a skillet until golden brown before adding to the cooker. This will add a little flavor, but the dish still comes out well without the added step and extra pan to clean.
Add butter, thyme and pepper to the crock pot. Cover and cook on high 4-6 hours or low 6-8 hours.
This is what the crockpot lime chicken looks like when done. At this point taste to see if any added salt is needed.
Remove chicken and place over rice, then top off with broth and fresh chopped cilantro or thyme. I suggest serving a refreshing Pineapple Mojito or Raspberry Iced Tea along with this dinner.

Garlic Lime Chicken
Ingredients
- 4 bone-in chicken thighs or chicken breasts (bone-in)
- 1 lime
- 1 cup chicken broth
- 2 cloves garlic minced
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- 2 tablespoons butter or olive oil
- chopped fresh parsley or cilantro optional garnish
Instructions
- Place chicken in a slow cooker. Pour in the chicken broth and squeeze out lime juice over the chicken.
- Add the garlic, thyme and pepper in slow cooker.
- Dot with 2 tablespoons of butter.
- Heat on high 4-6 hours or low 6-8.
- Serve over rice. Top with some of the chicken broth froth the pot and fresh chopped parsley or cilantro.
