This Chilis Queso dip recipe is my copycat version of the restaurant favorite. If your family loves Chili's skillet queso dip, make it at home to snack on with your favorite tortilla chips.
The delicious spicy dip can be made on the stove top or slow cooker. It is so easy to make at home right in your slow cooker, and tastes just like the Chili's version! This chili con queso may just be the ultimate easy party food, whether for watching the Super Bowl or casual family gatherings.
Chili's Queso
Since party season is coming into full swing very soon & many of you host on game days, it seemed the perfect time to share this easy appetizer recipe. It's a Chili's Copycat Queso Dip and packs a lot of satisfying cheesy flavor. It would be the perfect recipe for your Football Sunday gathering, or any festive casual party. You may wish to serve regular queso dip in a crockpot as well, if you have non-meat eaters in your crowd. Everyone will be happy.
Serve the Chilis skillet Queso Dip in a warmed small warmed cast iron skillet or right out of a bowl or small slow cooker along with tortilla chips, crusty bread, crackers or even use it as a sauce if you like.

Making the Copycat Chili's Queso Dip Recipe
Making Chili's Cheese Dip is super easy. This is how you do it..
Ingredients needed for the Chili Queso:
- Velveeta cheese
- canned no bean chili ( I used Hormel chili)
- milk (whole or canned milk)
- chili powder
- cayenne pepper
- cumin
- lime juice
How to Make the Chilis Queso
Making this Chili's Queso Dip copycat recipe couldn't be much easier. Just cut up the Velveeta cheese into cubes, and add all the no bean chili, along with remaining ingredients (milk, lime and spices) to a pot or slow cooker.
Stir frequently over low to medium heat, until you cheese is melted and you have a smooth Velveeta cheese dip. This type of cheese melts quickly. Serve warm.
That's all there is to this Chili's copycat recipe. A crock pot is perfect for making and serving the dip, since it keeps the dip warm. For a more authentic Chili's experience serve the chili queso in small warmed cast iron skillets.
I like to top with a little shredded sharp cheddar cheese, sour cream and freshly chopped cilantro or green onions when serving. Make sure to serve lots of tortilla chips, flavored corn chips, crusty bread or pita bread with this scrumptious dip!
More than just a Dip
The chilis queso can also be used as a delicious spicy cheese sauce. Pour it over burritos, enchiladas, your favorite sauteed vegetables or a host of other foods.

Copycat Chili's Queso Recipe
Ingredients
- 16 oz Velveeta
- ¾ cup Milk
- ½ teaspoon ground Cayenne Pepper optional, if you like it spicy
- 15 oz Canned Chili No Beans
- 2 teaspoon Chili Powder
- 2 teaspoon Lime Juice
- ½ teaspoon Cumin
Instructions
- Cut Velveeta into cubes.
- Stir all ingredients in a medium saucepan over medium heat or a slow cooker on low/medium heat. Stirring frequently will ensure smooth results.
- Serve with tortilla chips
