Here is what you need for the low carb recipe:
- 1 tablespoon olive oil
- 4 bone-in pork chops
- ½ onion, chopped (optional)
- 2 tablespoons tomato paste
- 8 ounces fresh sliced mushrooms
- 2 teaspoons Worcestershire sauce
- 1 cup water
- ½ cup heavy cream
- salt and pepper to taste
Directions
To start, take the chops and season with salt and fresh ground black pepper.
Turn on the pressure cooker and set to sauté mode, add oil and then brown the pork chops on both sides.
Add next 5 ingredients (all except the heavy cream) to the Instant Pot, and then cover.
Turn pressure valve to sealed.
Set manual high pressure to 12 minutes.
Once pressure cooking time has elapsed, do a quick release of the pressure.
Remove pork chops and turn the pressure cooker back on to sauté mode.
Pour the cream into the instant pot and stir the sauce with a wooden spoon. Continue cooking on sauté mode to thicken.
